Melostagma – Blossoms and Thyme honey contains 15% thyme pollen grains. It is collected from the nectar of various flowers but also from small and rare thyme bushes in the area of northwestern Lesbos away from cultivated lands, from the beginning of June to the end of August. Thyme is considered a top beekeeping plant because it gives an extremely aromatic honey with great nutritional value and is probably one of the most common types of honey. The percentage of thyme in this honey gives it its special "honey" aroma, its amber color and its thick texture. The crystallization of this type of honey begins after 6 months.
